Ingredients for vegetarian chilli recipe

  • 2 tbsp olive oil                       
  • 1 clove finely chopped garlic
  • 1 diced onion
  • 3 cm grated ginger
  • 1 diced red peppers
  • 1 diced courgette
  • 1 tbsp tomato purée
  • Half tsp cumin
  • Half  tsp paprika
  • Half tsp dried red chilli flakes
  • 1 can chopped tomatoes
  • 1 can cooked kidney beans
  • Pinch salt and black pepper
  • 1 tbsp chopped parsley

Method for making vegetarian chilli recipe

1. Heat the oil in a large frying pan over medium heat. Add garlic and ginger. Fry for 2 minutes whilst stirring

2. Add red pepper and courgette. Cook for 2 minutes

3. Add tomato paste and spices. Fry for 2 more minutes

4. Add can of tomatoes and juice and simmer for 8-10 minutes until thickened. Stir in drained kidney beans. Heat the mixture through and garnish with chopped parsley. Serve hot with salad, chips, tortillas or rice
