Ingredients

  • 3 tbsp (45 ml) vegetable oil
  • 2 leeks, thinly sliced
  • 1 celery stalk, diced
  • 1 carrot, diced
  • 1/2 tsp (2 ml) salt
  • 1/4 tsp (1 ml) dried thyme
  • 1/4 tsp (1 ml) pepper
  • 2 large potatoes, peeled and hopped
  • 3 cups (750 ml) vegetable stock
  • 1/4 cup (60 ml) shredded Cheddar cheese
  • 2 tbsp (30 ml) minced fresh parsley

Preparation

  1. Heat oil in a large pan over medium heat; saute leeks, celery, carrot, salt, thyme and pepper until soft.
  2. Add potatoes, stock and 3 cups (750 ml) water. Bring to boil then reduce heat, cover and simmer until potatoes are tender. Let cool till just warm.
  3. Pour into blender, puree until your preferred consistency. Recant into the pan and reheat gently. Sprinkle with cheese and parsley.
