Ingredients

  • 4 new red potatoes
  • 1-1/3 12 oz pork tenderloins
  • pinch salt
  • pinch pepper
  • 1 1/4 tbsp (18 ml) vegetable oil
  • 2 2/3 cups (650 ml) sliced mushrooms
  • 2-3 cloves garlic, minced
  • 3/4 tsp (4 ml) dried Italian herb seasoning
  • 1 cup (250 ml) chicken stock

Preparation

  1. Pierce potatoes with fork. Place in microwaveable dish with1/4 cup (50 ml) water. Loosely cover and microwave until tender. Set aside.
  2. Sprinkle pork with salt and pepper. In an ovenproof skillet, on a high heat heat up the oil and drop in the pork and fry until brown pork on all sides. Transfer to a plate.
  3. Reduce heat to medium and cook mushrooms, garlic, seasoning and more salt and pepper until browned and liquid evaporated. Add stock.
  4. Return pork to the skillet and place the skillet in an oven heated to 425°F (220°C). Cook for 15 minutes until pork is cooked to your liking.
  5. Stand for 5 minutes then thinly slice pork. Serve with sauce and a potato per person.
