Ingredients

  • 1 cauliflower, cut into florets
  • 2 red onions, sliced thick wedges
  • 50g mature cheddar, grated
  • 2 tbsp olive oil
  • 1 tsp ground coriander
  • I tbsp dried mixed herbs or chopped fresh herbs
  • Salt and pepper to taste

Preparation

  1. Heat oven to 200C (220C fan) or gas 7.
  2. In a roasting tray, place the cauliflower, red onion, mixed herbs and olive oil and sprinkle with salt and pepper.
  3. Roast for about 20 minutes, turning occasionally until vegetables start to brown.
  4. Sprinkle the cheese on top and return to oven for further 10 minutes.
  5. Serve immediately.
