Smoked salmon with poppy seed garnish for less than 100 calories

Ingredients

  • 300g smoked salmon
  • 1 tbsp poppy seeds
  • 2 oranges, zest and juice
  • 2 tsp red wine vinegar
  • Low fat spray oil
  • pinch black pepper
  • 1/2 tsp sesame oil
  • 85g radishes, trimmed, finely sliced
  • 3 spring onions, finely chopped

Preparation

  1. Whisk the poppy seeds, orange zest and juice, vinegar and sesame oil with black pepper.
  2. Separate the salmon slices and place into a mixing bowl with most of radishes and spring onions. Pour over the dressing and  toss together.
  3. Let salmon marinate for about 10 minutes maximum.
  4. Spread the salmon over a large plate, pour over remaining dressing.
  5. Garnish with reserved radishes and spring onions.
