Ingredients

  • 4 tbsp thai fish sauce
  • 100g vermicelli noodles, soaked
  • 3 large carrots , finely grated
  • 2 limes, juiced
  • 2 shallots, finely chopped
  • 2 chillies, finely chopped
  • 1 tbsp soft brown sugar
  • handful peanuts, chopped
  • small bunch mint, chopped

Preparation

  1. Gently mix the the fish sauce, lime juice, sugar, chopped shallots and chillies in a bowl. Set aside to stand for 5 minutes.
  2. Add the grated carrots, drained noodles and mint.
  3. Toss carefully.
  4. Sprinkle the top with the peanuts
