Ingredients

  • 1  large eggplant / aubergine, cut into 1/2-inch pieces
  • 1 1/2  teaspoons curry powder
  • 1 can chickpeas, rinsed
  • 1 cup, basmati rice, white or brown
  • salt and black pepper to taste
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 pints cherry tomatoes, halved
  • 1/4  cup  plain low-fat yoghurt, optional
  • Coriander, fresh, chopped, optional

Preparation

  1. Place the rice, 1 ½ cups water and a little salt in a saucepan and bring to a boil. Stir the once, cover and reduce heat to simmer for about 20 minutes. Remove from heat and  stand, covered.
  2. Heat the oil in a saucepan over a medium heat. Add onion and cook for about 5 minutes, stirring occasionally, until soft.
  3. Stir in the tomatoes, eggplant, curry powder, 1 teaspoon of salt and ¼ teaspoon of black pepper. Cook, stirring, for about 2 minutes.
  4. Add 2 cups of water and bring to the boil. Reduce heat and simmer, partially covered for about 15 minutes, until the eggplant is tender.
  5. Add chickpeas and cook for about 5 minutes.
  6. Remove from heat and stir in the coriander. Rake through the rice with a fork.
  7. Serve the vegetables over the rice with optional yogurt.
