Ingredients

  • 1  3 1/2-pound skinless chicken, cut in 10 pieces
  • 2  cups multi grain cereal flakes, crushed
  • 2  tablespoons dijon mustard
  • 2  tablespoons  olive oil
  • salt and black pepper to taste
  • 2  bunches kale or spring greens, leaves cut to 1 inch strips, any thick stems removed
  • 2  cloves garlic, thinly sliced
  • 1  lemon, cut to wedges

Preparation

  1. Heat oven to 400° F. Toss the chicken and mustard in a bowl till the chicken is fully coated.
  2. In another bowl, mix the cereal, 1 tablespoon of the oil and a little salt and pepper.
  3. tale the chicken and dip into the cereal mix till fully coated and bake on a baking tray until golden brown and the chicken is cooked through. This should be about 45 to 50 minutes.
  4. Cook the greens in a large pan of boiling salted water for about 10 minutes until tender. Drain of excess water.
  5. Heat the remaining oil in a skillet. Add the garlic, greens and pinch salt and pepper. Cook for 2 to 3 minutes.
  6. Serve the greens with the chicken and a wedge of lemon.
