Ingredients

  • 3 cups diced ham
  • 2 cups dried lentils
  • 2 cans condensed chicken broth
  • 2 cups diced carrots
  • 2 cups diced  celery
  • 1 bag baby spinach leaves
  • 1 cup chopped onion
  • 1 tbsp minced garlic
  • 4 cups water
  • 1 tsp dried oregano
  • salt and pepper to taste
  • 2 tbps fresh lemon juice
  •  lemon slices, optional

Preparation

  1. Mix all ingredients except the spinach leaves and lemon juice in slow-cooker or large oven dish.
  2. Cover and cook on high for 4 to 5 hours or on low 7 to 9 hours or until lentils are tender.
  3. Stir in spinach leaves, cover and cook 5 more minutes or until tender. Stir in lemon juice.
  4. Garnish with lemon slices if required.
