Vegetarian chilli recipe quorn

Ingredients for vegetarian chilli recipe quorn

Method to make vegetarian chilli recipe quorn300g Quorn Mince pack
1 tbsp oil, preferably olive oil
1 finely chopped onion
2 finely chopped garlic cloves
½ tsp ground cumin
1 tsp chilli powder
2 bay leaves
400g can chopped tomatoes

300ml vegetable stock
1 de-seeded and chopped green pepper
400g drained can kidney beans
2 tsp cornflour
1 tbsp water
salt and ground black pepper to taste
chopped coriander and red chillies to garnish
soured cream for a serving – optional
  1. Heat oil in alarge frying pan. Fry onion and garlic until soft. Add Quorn Mince, spices and bay leaves. Fry for 3 minutes
  2. Add tomatoes, vegetable stock and green pepper. Bring to the boil then lower heat and simmer for 10 minutes. Stir occasionally
  3. Add kidney beans and cook for 5 minutes
  4. Mix cornflour with cold water to a paste. Stir into the chilli mixture to thicken. Cook on low heat for 5 minutes. Remove bay leaves
  5. Serve hot with chips, salad, tortilla chips, jacket potato or boiled rice
