Ingredients

  • 2  (6-oz) boneless skinless chicken breasts
  • 1  onion, chopped
  • 1  green bell pepper, thinly sliced
  • 1 cup sweetcorn, tinned drained
  • 4 ounces Monterrey Jack cheese, grated
  • 1/4 cup low fat sour cream
  • 1 cup mild salsa
  • 8 six inch corn tortillas, microwaved
  • 1 tbsp olive oil
  • 1/2 cup fresh coriander, chopped
  • salt and pepper to taste

Preparation

  1. Heat oven to 450°F.
  2. In the meantime half fill a medium saucepan with water with a pinch of salt and bring to the boil. Add the chicken, reduce heat then simmer for about 10 minutes or until cooked through. Transfer to a plate to cool.
  3. Heat the oil in a large frying pan over a medium heat and add the onion, pepper and pinch of salt and pepper. Fry for about 5 minutes till tender. Add the corn and sour cream and heat for about a minute.
  4. Fold in the chicken, coriander and 1/2 cup of the cheese.
  5. Spread 1/2 cup of salsa in a baking tray. Roll the chicken mixture in the tortillas and place seam side down in the baking tray.
  6. Top with the remaining salsa and cheese. Bake for about 10 minutes until golden brown.
